Sodium Propionate USP

Abstract
Sodium Propionate also known as Sodium Propanoate is the sodium salt of propionic acid. It occurs as a white crystalline solid that is deliquescent in moist air. It is produced by the reaction of propionic acid on sodium carbonate or sodium hydroxide.

 

Use/Application
Sodium propionate is used in bakery products as a mold inhibitor. Propionates prevent microbes from producing the energy they need, like benzoates do. It is used as a food additive to prevent the growth of molds in bakery and other products. It is represented by the food labeling E number E281.

Shelf life, Storage and Packing
