Sodium Citrate IP
Abstract
Sodium Citrate also known as trisodium citrate is one of the three sodium salts of citric acid that has a saline, mildly tart flavor. It appears in the anhydrous, dehydrate and pentahydrate forms.
Use/Application
Sodium Citrate is used mainly as a food additive and has the E number E331. It is used as a flavoring agent in ice creams, jams, sweets, milk powder, processed cheeses, carbonated beverages and wine. It is also used as a buffering agent and an acidity regulator in gelatin desserts, medically as an anticoagulant and as an osmotic laxative and in boiler descaling.
